Enter this super easy and healthy waffle recipe that's become a total win in my house! It's packed with protein and healthy fats to keep those tiny engines running, and it's so delicious the kiddos will gobble them right up (no syrup bribery required... maybe). Plus, it only takes a few minutes to whip up in your blender, meaning less time spent in the kitchen and more time for morning cuddles or those last-minute permission slips!

Here's what you'll need: (Makes about 6 waffles)

  • Blender (We love our Vitamix, but any blender will do!)

  • 2 cups rolled oats

  • 1 teaspoon vanilla extract

  • 1/4 cup sugar (you can adjust this to your preference)

  • 2 cups cottage cheese

  • 6 whole eggs

  • Cooking spray

  • Waffle iron

Ready, Set, Blend!
